All Commercial Food Business must install and maintain a grease trap system under current legalisation. Cleaning on a regular bases is important to ensure the Grease Trap stays in good working order. Waste, fats, oils and greases from food establishments must not enter the waste water system. The reason behind this is they congeal and solidify into a hard mass causing blockages and disruptions to the efficient running of the sewers.
To prevent FOG’s entering the waste water system it is advised that the food industry use Grease Traps. And that they only use permitted waste collectors such as CES Environmental Services. This guarantees that all FOG’s are removed before it enters the waste water system.
In general they should be cleaned when 25% of the liquid level or the trap is grease or oil. Grease settles at the top of the chamber and must be removed. Also solids settle at the bottom of the chamber and must also be removed.
Frequency of Emptying will depend on the nature of the activity producing the grease. If they are receiving grease from a utensil washing process will need much less cleaning than one used to receive grease from a full service restaurant.
CES Environmental will collect the grease residues from the grease traps. We transport the grease to an authorized facility where the grease is recycled or broken down further. Our CES Environmentals Technician will provide our clients with certificates of disposal. This is in accordance with waste management legislation.
